Granola
Homemade granola could not be easier! Instead of buying granola in a plastic bag, make your own. Your body will thank you for all the preservatives and additives you will not be consuming, as well as your grocery budget for the money you’ll be saving. It’s economical and delicious. You’ll never go back to the store-bought stuff!
This recipe is very adaptable. We keep it pretty simple to make everyone from toddlers to grandparents happy but feel free to make it your own. If you like granola with nuts, seeds, dried fruit, etc., feel free to throw it in the mix!
We top it on yogurt with fruit and chia seeds. Kim’s boys like to eat it plain, as a side for their yogurt rather than a topping. They always ask for the biggest chunks. We eat it just about every day, either for breakfast or an afternoon snack. It’s a staple in our diet!
Ingredients:
4 cups rolled oats
1/2 cup or so ground flaxseed (optional)
1 tsp. salt
1/2 tsp. cinnamon
1/2 cup melted coconut oil
1/4 cup honey
1/4 cup pure maple syrup
1 tsp. vanilla
Preheat oven to 350. Combine dry and wet ingredients in separate bowls. Pour wet over dry mixture and mix well. Bake until golden, about 21-24 minutes, stirring in between. Press down for firmer granola.
Let cool undisturbed for 45 minutes. Break into chunks or stir around with a spoon.
Store in a glass jar at room temperature.
Notes: you can use a 1/2 cup of honey or a 1/2 cup of maple instead of 1/4 of each. We like the combo, but any of those options still turn out super yummy.
Feel free to add any dried fruits, nuts, or whatever you want if that’s your thing.
